Chia Ambrosia

Before leaving to go to town on Friday I ate up what remained of the Chia pudding. It seemed to me that if the claims made for Chia are anything like truthful then it was just the fuel food required for my expedition.  I can report that when the cafeteria on the boat opened I was not in need of my usual bacon buttie. That said, I did not resist. However, I ate nothing while I was in town and settled for a sandwich at 3:15 pm, when we had finished shopping and returned to the ferry terminal. For my supper when I got home, I had a little cheese and crackers.

I think that I shall persist with the Chia experiments. In that vein, I offer up today’s concoction.

Chia Ambrosia

Ingredients

  • ? cup Chia seeds
  • 1 -2 cup(s) Almond Milk. Press your own, if you wish –  but mine was a carton obtained off the shelf in Tesco – a dairy substitute.
  • 1 tablespoon runny honey (more, or less, to taste) – choose a good one, nice and fragrant. The honey is for flavouring as much as it is for sweetening. More so, really.
  • ½ teaspoon orange flower water (more, or less, to taste) Be careful, it’s pungent stuff and easy to overdo. All you want is a light fragrancing of the mix.

What I Did With Them

  • Warmed the honey jar in a bowl of warm water
  • Put 1 cup of  the almond milk (at room temperature) in a bowl and added the chia seeds and stirred
  • Stirred in the honey, quickly
  • Stirred in the orange flower water
  • Left to stand for a few hours, stirring occasionally
  • Found it too thick for my taste, so added further almond milk and stirred it up again
  • Chilled.
  • Ate with rapture.

It is possible that this concoction might work better if the milk were slightly warmed first, as the honey thickened again on hitting the milk.

Honey, Almond Milk, Orange Flowers… both Nectar and Ambrosia. What’s not to love?

If you want to up the food value a bit, try topping with whole, halved or flaked almonds, toasted or otherwise. Dried fruit would work also… most probably sultanas, but I would like to try apricots. A freshly segmented orange on top would be good too.

Figs? Oh, yes, fresh fig please. Cut open and filled with Chia Ambrosia. Topped off with an extra drizzle of honey.
