Vanilla-Rooibos Fig Newtons | My New Roots.

No yeast involved, but what looks to be a lovely baked treat. We both love Fig Rolls and we also enjoyed those Kellogg bars we used to pack up for walking trips… they are very reminiscent of fig rolls, but oaty and not at all fig-ish. No, I can’t remember what they are called.

Anyway, as stated. Love, love, LOVE fig rolls and have long wanted to attempt a home-made version.

These look scrumptious but a quick scan of the ingredients suggests that I may have some sourcing difficulties. Please, what is Coconut Sugar and what might be substituted (and at what rate). Also, have never heard of Chia seeds… Help! I’m not even sure that I have seen food-grade Coconut Oil anywhere in Orkney, can I use Sunflower?
