Bountiful

Having laid the first egg of the season, at least one chook is doing her job – and doing it well. That egg was followed by a second one yesterday and a third today.  It looks as though omelette season is upon us! Omelettes make a good Fast Day meal…

Today is a Fast Day and also a day off in the kitchen. After yesterday’s feast neither of us feels much like cooking or eating. I plucked a package of Ravioli (337 kcals each) and a pre-made sauce (67) from the freezer and made up the balance with a salad including small quantities of naughties such as avocado and croutons.

Dinner last night was pretty damn good, actually.  Not least because we serendipitously made some good choices in the liquid refreshment department. The red wine that I used to cook the beef olives was also used to wash it down and what a partnership it made. YUMMY. (Christian Patat Appassimento 2013) Full bodied and slightly sweet, it was the ideal partner to the sweet root vegetables in the casserole. The Madeira that we had with our dessert was also pretty stunning.
